Truffle Mac & Cheese

To make Italian-style mac and cheese, you will need the following ingredients:

  • 1 pound of macaroni pasta
  • 4 tablespoons of butter
  • 4 tablespoons of all-purpose flour
  • 3 cups of milk
  • 1 1/2 cups of grated Parmesan cheese
  • 1 1/2 cup of grated mozzarella cheese
  • Salt and pepper, to taste
  • Optional: 1/4 cup of chopped fresh basil or parsley for garnish


  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat.
  3. Once melted, add the flour and stir constantly for about 2 minutes to make a roux.
  4. Slowly add the milk, whisking constantly to prevent lumps from forming.
  5. Bring the mixture to a simmer and cook for about 3 minutes or until it starts to thicken.
  6. Remove from heat and add the grated Parmesan cheese, mozzarella cheese, salt, and pepper. Stir until the cheese is completely melted and the sauce is smooth.
  7. Add the cooked pasta to the cheese sauce and stir until the pasta is well coated.
  8. If desired, garnish with chopped basil or parsley.
  9. Serve and enjoy!

You can also add some Italian sausage or diced bacon to give it a more italian taste.
