Traditional balsamic vinegar that is made in Modena, Italy and is known for its unique flavor and high quality. It is made from the must (juice) of Trebbiano grapes and is aged for a minimum of 12 years in a series of barrels made from various woods, such as oak, cherry, ash, and juniper. The aging process gives the vinegar its rich, complex flavor and thick consistency. High-end Italian balsamic vinegar is typically sold in small bottles and is considered a gourmet product. It is used as a finishing sauce or condiment, and a little goes a long way in adding depth and dimension to dishes such as salads, meats, and fruits.
